Bright, refreshing and wonderfully simple, this Citrus Earl Grey Iced Tea combines fragrant Earl Grey with fresh grapefruit, lemon and a little honey, finished with sparkling water for a light, fizzy twist.
It’s a lovely drink for warmer afternoons, summer get-togethers or simply when you fancy enjoying your favourite tea a little differently.
What you'll need
Makes approximately 3–4 glasses
- 2 servings of Earl Grey tea
- 1 cup boiling water
- 2–3 tablespoons honey, adjusted to taste
- ½ cup fresh grapefruit juice
- ½ cup fresh lemon juice
- 1½ cups chilled sparkling water
- Ice cubes
- Fresh grapefruit or lemon slices, to garnish
How to make Citrus Earl Grey Iced Tea
1. Brew the Earl Grey
Bring the water to the boil and brew your Earl Grey according to the recommended steeping time, usually around 2–3 minutes.
Remove the tea and stir in the honey while the tea is still warm. Start with two tablespoons and add a little more if you prefer a sweeter drink.
Allow the tea to cool.
2. Add the citrus
Fill a jug generously with ice.
Pour in the fresh grapefruit and lemon juice, followed by the cooled Earl Grey tea.
Give everything a gentle stir to combine.
3. Add a little sparkle
Pour in the chilled sparkling water just before serving and stir gently.
Taste and adjust with a little more honey, citrus or sparkling water if needed.
4. Serve
Pour into glasses over plenty of ice and finish with a slice of grapefruit or lemon.
Serve straight away while it's cold and beautifully fizzy.
A few ways to make it your own
Prefer things a little sweeter? Add an extra drizzle of honey. For a sharper, more refreshing drink, increase the grapefruit or lemon.
You could also add fresh mint, a sprig of rosemary or a few slices of fresh orange for another layer of flavour.
And if you're making it ahead of time, prepare the tea and citrus mixture first and keep it chilled. Add the sparkling water only when you're ready to serve so it keeps its fizz.
